Honduras - El Anona Anaerobic Washed | Specialty Coffee
Jose De La Cruz Mejia Morales began growing coffee in 2015 on land inherited from his
father. To establish the plantation, he worked day-to-day jobs elsewhere, saving every bit
of money to fund his initial plantings. Today, he manages a small plot that serves as the
primary income source to support his family. He named the farm "Anona" after a native
tree variety (similar to a custard apple), that grows abundantly in the area.
This lot features the Typica variety and used an anaerobic fermented
process. The cherries are de-pulped the same day they are harvested and placed into a
controlled environment for a 66-hour fermentation period, which unlocks complex and distinct flavour profiles. Following fermentation, the beans are washed thoroughly with
clean water. The drying stage takes place at Jose’s home using a solar dryer. For a period of 22 days, the coffee is carefully moved and rotated every 20 minutes until it reaches 10% moisture level.
